    Default mung bean sprouts???

I've got some sprouts, but they are turning a purply color. Is this ok? How do I know if they're done?? It's been about 4 days, and yes they are growing, but I'm concerned about the color. Thanks.

I have mung bean and lentil sprouts....how do I know if they're TOOOO done?? Can I eat the "shells" of the sprout, or is there an easy way to "wash" them away??? Hoping I don't have to ditch the whole batch of sprouts because I always get to this point and I'm afraid to eat them. Dumb huh???

    Default mung bean sprouts

I've sprouted mung beans but mine did not turn purple. I ate mine in a salad and I eat the shells, too. I sprouted mine for two days before I put them in the fridge. I don't know about purple mung beans. taste it to see if it's bad....

Hi Tvillemom, I've sprouted mung beans and they turn purple. I eat them that way and I've had no harmful effects from them yet. As far as eating the shells from the sprouts--I've eaten lentil shells and they taste just fine, but I've not even tried to eat mung bean shells, I just haven't. Alanna:)

Is there an easy way to get rid of the shells? They really don't look/taste appealing to me.....I've tried rinsing them in a large bowl of water...some of them float...is that the easiest way?

That's how I read to do it Tvillemom. I do it the hard way lol, I sit down somewhere and squeeze the hull off while I'm watching tv or listen to the radio because it doesn't appeal to me to eat them either. I know it takes more time that way but rinsing off in water doesn't get rid of all of the hulls and I'd have to do it anyway. I wish I knew of an easier way but there doesn't seem to be one.

Mine turn purple too after sprouting for awhile. I sometimes eat them that way but I try to get to them before they do.

I tried eating my sprouts, and I'm sorry to say, I just didn't like them. I think maybe I had tooooo many growing at 1 time. I think I will soak some more seeds, and try only about 1/8 of a cup of seeds. How much would you suggest? I think I tried 1/2 cup of seeds...and then I just had too many that were...I don't know, funny looking...I don't know. Maybe I should sprout LESS at one time so they get rinsed well????
    Thanks.

I"m wondering why they turned purple. Did you grow them in darkness as recommended? I throw a dishtowel over my sprouts to simulate the cover of soil and not expose them to sunlight- for sprouts of this nature. Also, the dishtowel allows for air circulation so they don't stagnate. Glad you're sprouting though. Wish lentil sprouts didn't give me a gutache.... and yes, less is more for me with sprouts, huh.

You know, I think I will use my nutmilk bag. My sprouts were left in the kitchen open...in the sun, not direct, but sunny non-the-less. Thanks for the tip. I think I will soak some more, and sprout them in my cloth bag.
