    Default "Better than Rice" --it's fakin rice

    I call it rice, looks that way to me, tastes better than rice to me and takes seconds. Picture coming later. I took several one looks great.

    Better than Rice - carol giambri
    In food processor:
    broccoli
    carrots
    celery
    daikon
    ginger
    garlic

    Veggie possibilities are almost endless: red and/or green peppers too give a hint of color.

    Pulse in your food processor to consistency you like. I did it up to the point before it became "mush" and is very easy to eat with or without teeth -- for young and old. Place then in a bowl. I then added some fresh tops of broccoli that I didn't add in to the food processor, and mixed in.

    Sauce for it to sit in: olive oil, pinch salt...that's it...just mix it all together and let all the flavors mix, but if you can't wait, like I couldn't then eat away...

    Can give it a sweet/sour hint by adding lemon juice and agave. Now you have sweet and sour rice.

    Simple but yet so good....

    I think this would be a nice filling for enchilladas or even nori rolls.

    You can make any type of dressing but this is what I had and used. What I have around is what usually goes into my recipes.

    My husband gave it a "raving" review. He said he can't eat broccoli raw, but didn't tell him he is now!

    Why not put it in stuffed peppers, cabbage. I can see it topped with a marinara sauce if doing the stuffed pepper/cabbage here. What's so great, it's simple too. I love all the ingredients. Normally my husband would have said what about onions, but not here. It's got a great flavor and you can adjust it as you see fit for your taste buds. Really, really easy. Sure hope the pictures show the wonderful look. Oh, decorate with red bell peppers around the edges of the dish. Wow, am letting my creativity flow! I'm impressed with this dish. Hope others are too. Why not even a tahini dressing, a cashew one would work well too. Regardless, it's a keeper for me!

    Wow I am going to make it tomorrow! For sure! I don't know what daikon is but I'll look it up =) would you call this rice green and orange rice?

    Diakon is a root vegetable that is white and usually sold in Asian stores. I didn't peel any of the veggies I used. I look for carrots, broccoli and diakon to be more slender in width as I see it younger and/or tastier. Maybe not younger, but still not very thick either to cut up.

    You can call it anything you want but for me it looked like rice so that is what I thought of when I named it. I don't see it having hints of green and/or orange here. If someone wants to add some sweetness perhaps to it they can also add some agave. I just don't and maybe it can be sweet and sour rice. Imagination possibilities are here.

    I would love to know what you think. You can also add hints of red and/or green bell pepper if you want in your food processor too. Anything almost goes. Hope you enjoy it.

    Oops...originally forgot to put in ingredients celery but changed the original recipe to show it added. It just hit me. Hubby had several bowls!

    i think youve just convinced me to make the 8-hour-round-trip drive back to my apartment this weekend to pick up my food processor....
