    luna, I didn't use the Vitamix, I used the food processor. I processed it a lot though. But I did it in several different sessions, since I was stopping it to see how it was doing, so it didn't heat the mixture up too bad. Every time I stopped it, I just looked for the size of the cashew bits, and kept it going until I couldn't really see any bits at all anymore. The first couple of times I stopped it, I wondered if I should have used the Vitamix, since I still could see bits of cashews, but every time I let it go and then stopped it, they kept getting smaller and the mixture getting creamier. I was really pleasantly surprised with my food processor. :)

    It's just a cheap Black & Decker, your basic WalMart variety. ;)

    I'm not a big dessert person, but those pictures really made this look like something I wanna try, bad. Especially since my lil brother LOVES cheesecake. Maybe if I get it really good, next time I go down south to visit, I can make it for him.

    I'll have to try later this week.
