OK, my diet has been really weird lately.

The last three days I gotta have fresh made mature coconut milk. Every day I beat the coconut to pieces, wrestle the flesh from the shell, and cut it into small pieces. Throw them in the blender, cover with water, blend, strain, and cover the pulp with water, blend, strain, and repeat one more time. The end result 1/2 gallon of fresh coconut milk. And I (the hater of all milk for 49 years) drink this everyday. It's a thing of *I have to have it*!!! Poor hubby looked in the refrigerator a while ago and said, "didn't you make some more coconut milk this morning." It was all gone.

Then there is the cucumber, peeled and cut into spears that I cannot get through the day without, usually in the late afternoon/early evening area.

Also, we went to the HFS in Ocala last Friday when I went to see mom and got enough dates to almost fill a quart jar and cashew pieces and almonds. Sooo I can't live without them, everyday. I've made a small amount of cashew butter in the coffee grinder the night we got home and almond butter today.

Now, It's a good thing these will eventually run out.

Well, at least we are having a very late night salad.

Mom is 90 and living in a nursing home. She really enjoyed the visit.
