I just got some eggplant at the market and was wondering how to use it. Do you dehydrate them plain or do you marinate them first?

i slice 'em up, soak them in salt water for an hour or two, and dehydrate them at 105 degrees for 8 hours or so. Eggplant chips! Delicious!

    Smile flax seed crackers

The first time I made, and ate, flax seed crackers I felt like I was cheating on my raw eating! I love it. I make flax seed crackers at least once a week (I've got some going in the dehydrator right now!) and eat them with hummus, salsa, guac, "salmon" pate, "tuna", etc. I even took them with me to a restaurant ... the waitress wanted to know what kind of crackers I had (the restaurant makes their own crackers yet they are baked).

I've dried onions soaked in Braggs Liquid Aminos to put in my salads. I've done the same with nuts.

I don't think the flax seed crackers hinder my weight loss, they help keep my colon clean! :)

    rawbeliever,
Thanx for the tip. Do you peel them first?

Carmella: Oh, no, I'm too lazy to peel them. :) I do wash them, though. :)

I love the dehydrator. I use it for a lot of things, but mostly burgers, desserts, onion bread, and to warm things before eating. I have one of the cheaper round versions, and only wish I had an excalibur so I could make more things and make it easier.

The dehydrator has helped me stay raw, but this will be my first winter raw, and I know I will depend heavily on this to take the chill off some of my food.
