    Default Freezing vs. refridgerating??

    Are enzymes preserved longer by freezing things like nuts/seeds/oils vs. refridgerating? or would actually freezing them degrate the enymes faster?

    Hi Rmiller -

    I have been doing some research on this. When I look at the information provided by different universities, the finding is that freezing does not kill enzymes. It slows them down, but then they speed up again when thawed.

    However, most of the raw sites I have looked at, where I don't see any references or sources cited, state that freezing kills enzymes. I wonder if they are speaking of the freezing process that includes blanching.

    Rmiller...i don't buy frozen fruit, but when I have an abundance of fruit...I do freeze it myself. Things I freeze often are bananas, strawberries and blueberries. Plus, I like some frozen fruit in my smoothies, just a personal preference. I think Alissa states in her book that freezing food on your own is ok, you just don't want to purchase frozen as its usually been heated or processed in some way. Someone correct me if I'm wrong on that.
