    here is a list of common curry ingredients and what they are.

    seeds = cumin, mustard, cardamom, fenugreek, poppy

    fruit = allspice, chilis, black pepper, caraway, celery seeds, coriander, fennel, mace, nutmeg, paprika, vanilla

    leaves = basil, bay, cilantro, dill, marjoram, mint, oregano, parsley, lemon grass, kaffir lime

    bark = cinnamon

    flower buds = cloves, saffron

    root = ginger, turmeric, garlic, galangal, shallots

    the basic ingredients for a thai coconut curry are chilies, lemon grass, galangal, garlic, shallots, kaffir lime, cilantro roots, and shrimp paste.

    indian curries use tamarind, coriander, ginger, garlic, chili, pepper, cinnamon, cloves, cardamom, cumin, fennel, fenugreek, nutmeg, coconut, and turmeric

    since we dont use shrimp paste i would either leave it out of use something like nama shoyu or braggs

    have fun
