Eggplant from the CSA sliced into rounds, topped w/fresh tomato sauce (made w/tomatoes, mint, olive oil, garlic, pine nuts, celtic salt, and basil), marinated veggies (bell peppers, red onions, jalapeno w/lemon juice, olive oil, salt), sundried olives, and fresh chopped oregano.
Mmmmmm......smells delish!

Mmmm, its really good! It gets two thumbs up! The ones w/olives on them, especially! You must try them! Make sure to dehydrate the eggplant until soft-ish.
