    Default "shelf life"

    I'm wondering how long people keep dehydrated stuff and specifically things you make and keep colod, like mock salmon pate or nut dips and such? I'm having trouble adjusting the quantity of what I make to fit 1-2 servings and thus have leftovers and hate throwing them away, but am concerned about them going bad/rancid quick.

    I don't keep anything for more than 3-4 days. Someone may say that is too long, but I haven't had any trouble doing it. I have, on occasion, thrown out more food than I would have liked to.

    If you make too much just freeze it! The nut pate's are good for about 3-4 days, but they should freeze for a few months just fine. Dehydrated stuff just depends on the stuff, dryer stuff lasts longer wetter stuff lasts less long. I'll keep wetter stuff in the fridge just to be sure.
