"Cole Slaw"
I made a really neat coleslaw that was better today than yesterday! I used purple cabbage and yellow raisins. It is sooo pretty!
I used:
1 medium red cabbage, shredded
1/3 cup olive oil
1 TBL sweetner
3 TBL apple cider vinegar
1/2 tsp sea salt
lots of yellow raisins

Yum! I just love slaw. I will try this. You mentioned a sweetener. What sweeter did you use? I am experimenting with fruit in order to not have to use sugar or honey like in the traditional recipes. My sister made one with dried cherries and chopped pecans that was delish.
I find that the purple cabbage adds such a festive air to slaw doesn't it? I am not a fan of beets, but the purple stuff is sooooo good for us, so I endulge in the cabbage.

I used maple syrup, I know it isn't raw, but I am starting to feel guilty for eating honey (good grief...had nightmares about bees coming to rescue one I accidently put in the food processor...they covered my face solid) Today I found agave nectar I am going to try it now...

KFC Coleslaw
Here's a KFC coleslaw imitation. Haven't tried it yet, heard it's good (KFC is my favorite type of coleslaw, sweet but with a slight vinegar taste).
Pkg of coleslaw mix (or shredded cabbage, red cabbage, carrots)
2 TBS minced onion (opt)
1/2 C raw mayo
1/3 C honey
4 TBS lemon juice
1/2 tsp salt
1/2 C raw almond milk
mix wet ingred in lg bowl. add coleslaw and and toss well. chill overnight (this makes the flavors soak in).
Raw Mayo
• 1 cup raw cashews
• 1/4 cup water
• 1/4 cup lemon juice
• 2-3 soft dates, pitted
• 1 teaspoon Celtic salt
• 1 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 1/2 cup olive oil
1. Puree all ingredients, except oil, in food processor or blender and blend until smooth.
2. While continuing to blend, add oil in a steady stream, until emulsified.
3. Store in a tightly sealed container the fridge for up to 2 weeks.

Hi,
this recipe does sound delicious.
I don't use honey unless the recipe calls for it.
I use alot of medjool dates, soaked, and often raisins,
But I hear the Agave necter is good too.
My most used sweetener is stevia, my hubby grows this in our herb garden, so it is my favorite to use. It just makes things green, and there is no substance to it, so it isn't sticky or full, like dates, so it doesn't hold stuff together,

Hey Golfngardennut,
I tried you cole slaw receipe last with my dinner. MMMMmmmmmmmmmm...... Is all I can say. Hubby really enjoyed it as well. I'm having the rest of it for lunch today. Can't wait.
