Default Gluten FREE grains for sprouting?

As an offshoot from the other gluten sprouting thread, I was wondering if anyone knows of any grains for sprouting and making dehydrated raw 'bread' that don't contain any gluten at all or at least very little? Thanks in advance.

    Default Gluten-free

This is a quote from a post by FireFaery:

"EVERYTHING HAS GLUTEN IN IT! IT's very frustrating. If the box says GF that should be fine. Soy sauce does have gluten, however tamari does not. The brand needs to be high quality and identify itself as wheat free. Many spices/salt have gluten. All grains have gluten-but again, you're looking for gliadin. Corn is safe, rice is safe (unless spices are added), buckwheat is safe and millet is safe. Wheatberries, barley, rye and oats are all out. Quinoa is a seed and is fine. Beans in the unprocessed form are fine. It's really hidden everywhere-not that you're using it, but Rice Dream has gluten. Ketchup has gluten. THe list just goes on..."

    from the thread: http://rawfoodtalk.com/forum/showthread.php?t=13087

And I have since read info backing this up.
    Hope it helps

Buckwheat & Quinoa are good. No gluten.
My son has been gluten free for almost 5 years now.
He likes the dehydrated "Buckwheaties" raw vegan cereal.
Alissa has some Buckwheat recipes in her book for bread-like things.

Tamari does have gluten in it. Ketchup generally does not, at least in this country. These days with the new labeling laws, gluten must be disclosed as an allergen. If the food is produced in a plant with other gluten containing foods that must be disclosed as well. The reason Rice Dream has gluten is because when they removed the outer part of the rice, they use barley and barley contains gluten.

Quinoa, millet, brown rice, and buckwheat are gluten free. I think buckwheat works the best for bread.

Thanks so much for the information, guys. I'll look for quinoa and buckwheat then.
