    Default Going on Vacation need suggestions

    For meals. I am going to a non-raw or even vegetarian home so I am trying to make it easy as possible for me and them. I am taking my own nuts and some special ingredients I think are going to be hard to find when I am there. So far on my list I have easy pad thai-from the compilation raw book with all the different raw chef's recipes. Paul's pate for tacos from Alissa's book, also the corn chower from this thread. I have fruit puddings and the date nut torte from Alissa's book. I am going to make 1/2 the recipe and then I need one more dessert that would be easy and several more recipes that don't have too many ingredients. Any suggestions would be great. Thanks in advance.

    What about dehydrating some crackers and taking them to munch on?

    Also, any dehydrated cookie could be made ahead and taken for a dessert.

    I have enjoyed Juliano's "Barbecue Sauce" on zucchini pasta. It's so good. Here's the recipe:

    1 c. fresh tomatoes, chopped
    1/4 c. chopped onion
    1/2 c. sun-dried tomatoes, chopped
    1/2 tsp. minced garlic
    3/4 tsp. minced jalapeno
    4 fresh basil leaves
    1/2 c. Medjool dates, pitted
    olive oil or fresh tomato juice for blending
    1/4 c. Nama Shoyu or 1 tsp. Celtic sea salt
    1 T. olive oil

    Combine in processor and blend. Keeps 2 days in fridge. Makes 2 1/2 c.

    I'll be going on vacation at the end of the month and will be staying at a non-vegetarian home. They will freak if I tell them I eat raw! So I'm going to have mostly fruit salads with nuts (or nut milks) for breakfast, salads for lunch, and then more salads or soups or something else for dinner. I think I'll snack on fruit or veggies dipped in nut butters, raisins, etc. I'm not going to cook while I'm there and we'll be at a lot of restaurants so the salads should be easy and hopefully creative. Oh, and lots of smoothies.

    I went camping for a week with Alissa's carrot pecan burgers and salad fixins. They keep pretty well. Also eggplant tacos from the "Raw food Primer" keep well and are easy to make- and oh so good. Any kind of flax cracker would be good also. :) Have fun!

    Lightbulb Vacation Food

    I have found that the best simple travel food is trail mix. When my hubby and I are on the road, I mix it up and take a few bags. Apples and citrus fuits travel well too, since they don't bruise to easy...(DH has often looked at a smushy banana and said "yeah honey..." so I don't tend to take those unless I know they don't need to pack into a travel tote!

    In terms of "uncooking" one thing I have always had good luck with when spending time with family and friends is guacamole. I find that I can eat it on veggie chips, (chopped raw stuff) and the guests can eat it on whatever they choose. It is a pretty familiar site at parties, and therefore will be eaten up quickly. Left overs are easily incorperated into a salad dressing.

    I have sometimes served the guac or other dip with sprouted wheat tortillas tears: just sprout wheat untill the tail starts, and then grind together in a food processer with a bit of tahini or ground sesame seeds, a pit of water if needed and a bit of celtic salt. Work it until the gluten developes and then roll out on parchment. I have dried them lightly in the hot sun, (I lived at the time in a very hot dry climate and had no dehydrator) or also in a dehydrator, and then tore them up into pieces when they were dryish. You don't want to over "cook" these. I love them with a bit of cumin and cayane the the mix too. If you let the sprouted seeds start to ferment a bit, say a few hours in a warm area, they will develop that rejuvalac flavor and the resulting tortilla pieces will taste a bit like cheese. I read this in the OLD "uncook book." (not julianos version.)

    You can also tempt people toward fruits and veggies and a high raw diet by making very attractive dishes, made with familar ingredients. Some might be scared of a nut pate nori roll, (even though they taste delightful) but be thrilled to dive into a delicious fruit salad. I would encourage you to use lots of beautifully ripe colorful fruits like kiwi and berries. They attract the eye and the tastbud. Tomato-cucumber and red onion salads are a great fruity addition to any meal.
