    Default Taco Wraps

    Man, this is lip-smacking, elbow-dripping, mouth-watering delicious!!!

    I was wanting something like tacos and came up with this recipe.

    3 ears raw corn
    1/2 medium zucchini
    1/2 large onion
    2 medium tomatoes
    celtic sea salt to taste
    cumin to taste
    squeeze of lime
    Romaine lettuce

    Cut the corn off the ears then "cream" the ears by pushing the knife blade down them. My salt is the large grain so at this point, I added the salt to the corn to dissolve, then set aside. Dice tomatoes, onion and zucchini. Add corn, cumin & lime. Stuff lettuce leaves and gobble down! They're really juicy so you may have to stand over the sink to eat them! We could not believe how good they were!! If I can eat like this, I can stay raw, yessireeeee!!

    They may have been even better with some avocado but they were past prime at the store. Really, I don't see how they could have been better. If you try them, let me know what you think!

    That certainly looks yummy. There is a lot to be said for appearance when it comes to food. Think of the sushi or pastry chefs and the incredible feasts for the eyes they come up with! (I love watching those competitions on the Food Channel...speaking of which, they aught to do a Raw Food special on there..

    Looking at your picture I was thinking it would also taste lovely topped with a bit of cilantro and a dollup of mashed avocado!

    I love using lettuce as wraps. Tastes delighful when you wrap sprouted hummus or mashed bananas...

    oh- in case you were concerned about the celtic salt being too large in its grain, you can order a special grinder from the Grain & Salt Society. The salt will rust your average grinder...(been there, done that! )

    I can also see rounds of purple onion rings on top. How about circles of bell pepper--different colors too. I bet this dish can lead to a a million creative dishes. Thanks Deb for getting us on a "roll"--no a WRAP!

    I made the recipe with a few changes:

    I put tomatoes on the side (as I don't like tomatoes)
    I didn't mash the corn

    I tore up lettuce into a bowl and sprinkled the mixture on it. It was very clean and easy to eat

    My daughter told me today that this is the 2nd raw dish that she has had that she actually likes! Yea!!!!

    I really liked it and will make it again.

    My son just came home and had some and REALLY liked it

    Hi Deb -

    I made your tacos for dinner tonight and DANG! It was sooo good! It is the cumin that does it for sure.

    I also added a bit of chili powder and paprika for a bang, and chopped up some avocados and cilantro as well. I topped it with some alfalfa sprouts. QUITE tasty. I am still licking my lips. Thanks for the great recipe! I think I am going to make this for my family to try at my b-day party tomorrow I am quite certain they will dig it.

    I imagine it would be good with some julienned jicama as well - I'll have to try that next time.

    I took pictures (as always) and will post those soon in my photo gallery.

    Same here Curtis- Deb, your presentation is wonderful! Great job!

    This recipe sounds wonderful! I am working on a refried bean recipe right now- I started to make something the other day, and the golosh tasted just a tad short of the real thing!!!! I am working on it this week and I want to make Alissa's enchilada wrap for the shell... I will keep you all posted on the progress!

    wow, that does look and sound really good...i love corn...i'm gonna have to wait till summer to make this one though...no corn here till summer...yummmmm...i'm in love with this board...we're never gonna run out of good recipes :)

    Hi,

    I must admit, it cerainly looks and sounds great. The cumin will be what really makes this taste great. Good spices are the key to all ethnic type foods, well actually all foods that taste good, anyway.

    I have found that a really great taco wrap is to use Alissa's pizza wrap and if you roll it very thin, and dehydrate to soft and still pliable, it wraps really easy, or you can roll it a little thicker and roll in half over something while dehydrating, my hubby made me some screen things, so that they dehydrate in a hard taco shape, they are perfect.

    I don't care for the chewiness of the enchilada wraps, gets stuck in my teeth, and they are awfully sweet, although I love corn.

    But the Pizza wraps this way work really well.
