    Red face Flash Pasteurization

    I contacted a company selling coconut water to see if it was fresh or had been pasteurized or had preservatives etc in it and this is the email I got back:

    Dear Analeah,

    We have been told by the distributor of the coconut water that the heat
    flash form of pasteurization does not kill any of the enzymes.

    Sadly we know only of this brand of coconut water, and I do not know of any
    other brands that do not use pasteurization.

    To legally sell this product in the US, the product needs to be pasteurized.

    I'm curious if anyone here has research information or some kind of information showing either that flash pasteurization does or does not kill the enzymes because I always thought it did so now I am confused lol.

    Hmm okay that is what I had assumed. Do you have any references or any information which proves it one way or another or where do you base your information from?

    Ok cool let me know if ya do find some info on it. I totally know what you mean about the hand dipping thing but I think the flash pasteurization thing lasts for about 1/2 to 1 tenth of a second and I'm just thinking that I have passed my hands or fingers through the fire for longer than that without any pain to my hands. Obviously this doesn't really have anything to do with knowing if the enzymes are killed but I figure for that short of a time it is possible maybe that the enzymes are not effected by it?

    i think that it is quite possible that for that short a length of time that many of the enzymes are still intact...though certainly some are affected.

    sometimes you just can't split hairs, you know? you still have to live a little.
