I love to use cukes in green smoothies. They juice beautifully, too. I seem to remember a drink recipe called Cucumber Mint Cooler - not sure which recipe book it's in, though.

Perhaps you could try making a huge salad to go with your dad's meal. He has a little salad (add SAD ingredients to please him) and you have a LOT of raw salad. For breakfast, you and he can share...

I use bok choy in green juices sometimes. I don't recall a strong taste to the bok choy juice. There's a whole lotta juice in that stuff. Not sure if the baby greens would yield as much, though.

RawVegRon, a great way to have beets is to grate 2-3 medium beets and toss them with a raw vinaigrette dressing. I add some Dijon mustard to my dressing, but that's not raw. :o Grated Beet Salad...

My favorite is the Cranberry Maple granola in the RFRW book.

I love beets grated and dressed with a dijon vinaigrette.
There's also a drink called Hot Pink in RFRW that uses beet juice, I think.

Try cabbage rolls or the Purple Pockets in LOLF with veggies and dressings as fillings. Or how about zucchini hummus or other dip and veggies (and crackers once you get a D) for dipping. Right now...
