Watermelon Salad

6 cups cubed, seeded watermelon ( I bought seedless)
1 bunch scallions, chopped
2Tbsp. balsamic vinegar
1/4 C olive oil
salt and pepper to taste.

Not fair!

I am sitting here drinking a green smoothy looking at these great pictures. What I am drinking doesn't compare to how these look.

Makes me motivated to "cook" today.
