I'm not sure of the type of Barley but it won't sprout like other grains regardless. You just need to soak for a day(24hrs) Next time I go to the store I'll pay attention.

Raw spanish rice is actually made with Barley and soaked for a day, then blend with tomatoes, oninons, garlic , some spices... it is very similar to real thing. The texture is what wins me...
