I eat it like a grapefruit - peel the tough outer skin and some of the pith and then eat the segments inside.

Yes! Slice long-ways with a vegetable peeler into wide fettuccine-like noodles. Sprinkle a little salt and olive oil on them, rub it in, let sit for at least a few hours and voila! Delicious noodles....

I use butternut squash for noodles. It is best to peel the squash then I use my vegetable peeler to continue to "peel" noodles off - sorta like wide fettuccine...
