Great idea to make a big cookie and it is so pretty in presentation too! So how did you make the apricot jam? In my old days of cooked foods I made apricot freezer jam each summer but that won't work now!
I actually found left over apricots I had frozen from the summer and just added honey ond wizzed in the VM, That's all! :)Quote:

I always triple the recipe too;
1 c. SOAKED almonds (starting with 1/2c. unsoaked)
1 c. SOAKED hazelnuts (starting with 1/2c. unsoaked)
1/4 flax meal
1/2 dates
1.5 t.citrus zest
1.5 t. vanilla extract
I like to grind up nuts first then add everything else. Worked best in food processor vs VM.
Fruit filling; (BTW make a great all round jam - so again make loads)
1 c. berries or any fruit (I have been using frozen mixed berries) or soakes apricots etc.
1/4 c. dates
puree till smooth - I have had best luck using food processor for entire recipe.
Put a BIG glob of jam on cookie as is shrinks. Dehydrate to desired firmness.
Dough lasts forever in fridge thats why I triple it.
Those in the picture I first rolled in coconut!

"1 cup soaked nuts (1/2 unsoaked)", do you mean to use 1 cup of soaked almonds and another 1/2 cup of unsoaked nuts?
