Chocolate Covered Donuts!
What kid does not like donuts! I love being able to sometimes present items to my daughter (7) that mimic SAD foods well and this does the trick.
Some of you may be up in arms and think why would I want to mimic SAD. Well one good example is that she is going to a BDay party tomorrow and I will be sending her with one of these made into a piece of "cake" shape so that she can particapate in the celebrations without feeling singled out.
The recipe is ani phyo's donut holes w/o the coconut.
Chocolate "Sauce / Ganache"
cocoa butter
coconut butter (you can use all coconut butter too)
cocoa powder
agave
maple (just a touch to round out the flavour)
salt
I only make a small qty at a time and use equal parts of the butters then add the rest to taste so like 1-2T ea. of butters, 1t. cocoa, 1t. agave 1/2t. maple, pinch of salt
melted over hot water. not on stove just from the boiled kettle. I use a heavy 2c. glass measuring cup in a 4c. measuring cup (see 2nd pic in post #35). Cover fruit and pop in freezer to harden.
Donut "Batter" (also used for cupcakes in post #48 of this Thread)
1 3/4c. almonds, ground to flour
1/2t. salt
1 vanilla bean, scraped
2c. dried unsweetned pineapple, chopped small
2c. dates, pitted
1/4c. dried unsweetened coconut (to roll in)
Put all but coconut in food processor. Process to mixed. Do not over process or will get oily. Form in to desired shape. There are great both undehydrated and dehydrated. If not dehydrating keep in fridge.
Her recipe calls for this to be much more chunky but we prefer a fine crumb.
