I made the yummiest Kale salad for lunch.
I used Allissa's recipe and added corn. I ate the hugest bowl of it.
Can't wait to get more kale to make more.
Ingredients
1bunch Kale chopped
1 ear corn
1avocado
1cup tomatoes
Olive oil
Lemon juice
Sea salt
Method
Put all into bowl and squish with your hands to wilt Kale and cream avo.
it's good stuff isn't it. I have kale growing and can't wait to make it from frshly picked :)
I love Alissa's kale salad - and the corn addition sounds great! I have so much corn from the garden I might just have to have this for dinner :)

I made a big batch of kale salad 2 days ago, and can't stop eating it! It's so good. Just sliced kale really thin, added lemon juice, a little fresh orange juice, chopped onion & garlic, a few olives, and a bit of fresh tomato salsa.
I've never tried this type of salad with corn. (Raw corn in December?) Though, this type of recipe is wonderful with lots of shredded zucchini. Try it!
