Coconut ice cream?
Hi,
I am very interested in making coconut ice cream/Popsicles. I have some of those popsicle molds and have already made different ice creams. I would like for this coconut popsicle to be sorta creamy/milky. I bought some almond milk and I have 2 mature and 1 young coconut. Anyone got some kind of recipe? Thx
PS I forgot to mention I got lots of different nuts and other ingredients too.

Well I went ahead and experimented. I made a mixture of almond milk and coconut water. Added a bunch of coconut shreds and then I added just a touch of sweetener and some cinnamon. It taste almost like Horchata. Anyway I put them in the ice cream molds and will try one later.

You can just use the coconut meat with the coconut water. You blend it first and let it quite thick. Then refrigerate before you put it in your ice cream maker.
I many time, just pour it in silicon mold and freeze it. I will then get it out and let it thaw just a little bit . It will have the same texture as icecream

I would love to be able to make a clone of "Coconut Bliss" ice cream. It's about $6 a pint here and I buy it occasionally for a treat :) Our store carries 4 flavors.
