"Feta Cheese"...not quite, but still tasty!
Had a notion for Greek Salad for a few days and was able to go grocery shopping yesterday (sick:sick:); aside from grocery, I also bought a new coffee grinder. Only just now made this for the salad today. It's not quite feta cheese, but it still tastes pretty good.

Almost "Feta Cheese"

Yield: approx. 2-3 ozs (weight)
For this small quantity, I used my spice grinder (aka coffee grinder).
1 Tablespoon pinenuts
1 Tablespoon cashews
1 teaspoon ground sesame seed (optional)
1 teaspoon lemon juice
garlic powder (optional)
nutritional yeast (optional)
Mill the pinenuts and cashews, scraping down the grinder. Because of the high fat of the pinenuts, you may have to mill the cashews first, then the pinenuts. Combine all the milled products in bowl with the garlic powder and nutritional yeast. Mix in the dry ingredients well before adding the lemon juice. Add the lemon juice in a little at a time until the mixture begins to gather together. Roll into a ball or square shape. It was so much that I used only enough to make 4 small grape sized bits to add to my salad. The lemony dressing didn't dissolve the bits too much, but you may want to dehydrate this first before using in the salad. It was delicious! Enjoy!
