I have made almond butter in my vitamix 5200 many times. I always add a oil on the very bottom and then a little on the top after putting the almonds in the container. You can dump the oil the following day as it will rise to the top of jar you used. Mine always came out very smooth and never dry or hot. You just have to start plunging away and the more oil you use the easier it blends. I have mastered it to use less each time i make it and always comes out great. Sometimes i would blend for 30 seconds and shut the vitamix off for a few minutes and come back and blend again. That was when i first started making it. I also found this website.
