Unbelievable Marble Cheesecake

Rate this Entry
Myyyy goooooodness! Last night I made raw cheesecake that was unbelievable!!! No doubt. Adriel found the recipe here on RFT somewhere, so this is the recipe:

Cheesecake

Crust
1 c dates
1 c walnuts

Put in food processor the press into pie pan
(I didn't have walnuts, but what I did was grind about 1 c hazlenuts and 1/2 c almonds in a coffee grinder, and mixed it with less than a 1/4 c coconut butter with my hands and pressed it into the pan. It was pretty graham cracker crusty)

Cheesecake Filling

3 c cashews (the recipe says to soak them for at least an hour to make them soft. I don't have a very good blender, so for me it worked better to not soak the cashews and instead put them into the coffee grinder until they were a very fine dust [very creamy] and it was perfect)
3/4- 1c lemon (or orange combo [I juiced a whole orange and a whole lemon and it made a little over 3/4 c)
1 banana
1 tsp vanilla
1/2c water

blend all ingredients 'til smooth to taste.

Pour cheese mixture into crust

Place in freezer until firm 3-4 hours perhaps (I put it in my freezer and it got too frozen, so I put it in the fridge this morning and it's perfect texture this evening.)

Well... for ME... I poured AROUND 1/2 the cheese mixture into the crust and then mixed a random ammount of raw cacao to taste into the rest, then I placed large spoon-fulls of the chocolatey mixture evenly spaced around the pie and took a skewer (any device with a precise end will work :) and twirled the cheesecake in the same direction until it looked to my liking. Then I placed evenly spaced decorative almonds around the outside and some homemade dehydrated coconut meat chreds and it looked very nice. here's the picture

Oooh yyyeah....

So I had a delicious rawich for lunch. Pic: (onion bread, roma tomato, sweet onion slices, sliced avocado, cilantro, baby spinach and avo-mayo) ooOoo

I made a bunch of onion bread and 4 "personal sixed" pizza crusts from rawguru.com last night, woke up ahlf way through the night and flipped them over in the dehydrator and then let them go until a little after I got up. Here's the recipe for the pizza crusts.

Crust
3/4 cup golden flax seeds (ground fine)
2 cups almonds (ground fine)
2 cups sunflower seeds (ground fine)
2 tbs. olive oil
2 tsp. dried basil
2 cloves fresh garlic (chopped)
1 1/2 tsp. salt
3-4 tbs. honey
1/2 cup water or as needed

The recipe says to split this into 2 pieces, form balls and smoosh onto teflex (or parchment paper) and dehydrate set to 105 F. for 10 hours, then remove from teflex sheet and continue to dehydrate on the tray for 10 more hours. I split them into 4 little personal sized pizzas and dehyrdated them for 4 1/2 hours then flipped them and removed them from the parchment and left them for another 4 hours. They're a little softer than I'd like and I may pop them back in but since I didn't know with the personal sized ones, I would rather under-do than over-do. :) Still, today went well. I'm 21 and have a very active social life. My friends have been eating their junk food in front of me all day today and all day yesterday and I am very proud to say I have not even felt the CRAVING for the SAD food (that's besides the whole social-eating thing. It's not a craving, it's just that.. well... Everyone else is doing it.. ..) Well.... everything is going well in Cameo-ville and I'm happy to day that I CAN already feel the familiar difference in the way my body feels and is reacting to the fuel I am giving it. :) Brilliant.
