i have begun to discover the wonders of quinoa. its rapidly becoming one of my favorite foods of all time.
i made some kickass sprouted quinoa tabbouleh salad which i know someone has written a recipe for in the past. funny thing is, i made it completely of my own invention the second day i went raw, almost 2 years ago.
it involves, roughly:
2c of sprouted quinoa (takes abt 1c dry, and 12 hours to sprout)
2tbsp fresh lemon juice
3tbsp olive oil
salt to taste
2 tomatoes, chopped
1 clove garlic
lots of parsley!! (i didnt have parsley so i left it out this time and it was still good... but i miss it)
and thennnnnnnnnn i made reeeeeeeeally good hummus, somewhat inspired by sarma melngailis' recipe in raw food real world (e.g. with cashews instead of sprouted chickpeas). its pretty heavy because of the cashews, but it lasts a long time.
again, roughly:
1/2c raw tahina
1c cashews
1/2c water
1/4c olive oil
2 cloves garlic
1/4 lemon juice
1tbsp cumin
1tbsp paprika
i dont know if that last recipe is gonna be any good, because i didnt measure AT ALL when i made it. next time i make it i'll measure accurately. suffice it to say, its the best raw hummus ive had yet... so experiment, its totally worth it
i think ive been putting on a little weight for winter, and especially because ive been eating a higher proportion of cooked food lately (mostly vegan though)
in any case.. i've started swimming again and im going 100% raw again and FOR REALS this time ahahahah
