Breakfast: spring roll with plum sauce and cauliflower rice
Lunch: cauliflower 'rice' in avocado mush, with scallions, tomato and soy sauce (the cauliflower rice is getting addictive!)
Dinner: Avocado pasta with marinara sauce
Petri's having what I'm having today too! I think he finds it nurturing that I'm going out of my way to make these special dishes, and doesn't want to miss out, which is awesome because I love making them and I love sharing them.
Tonight it will be avocado pasta. I've told him to get some slightly unripe avocadoes. I thought about this some days ago, because an aldente pasta really doesn't taste like wilted zuchinni, but an avocado that's a bit stiff and is turned into noodles comes quite close.
Avocado and tomato is one of my favourite combinations, so this should be awesome. I'm going to add some walnut 'meat' to make sure it's filling enough for him.
