Coconut Cacao Nib Ice Cream
Here's tonight's ice cream:
3 handsful cashews
meat of one young coconut
1 cup water
1.5 cup coconut water
12 medjool dates
1 tsp vanilla
Blend until smooth. Chill for one hour. Throw into the ice cream maker for 15 minutes. Throw in a handful or so of raw cacao nibs and let it swirl until blended. Freeze for an hour or so. Enjoy. Mmmm.....
