Wild Rice and Mushroom Salad

I've been soaking some wild rice (actually a grass not a rice) for three days and it finally got soft enough. I think sitting it in a dehydrator might make it even softer but it would have to be in there for quite a while. I added some marinated mushrooms and it was very good. I almost wish I had eaten more of the rice and not bothered with the avocado.

It's a very simple recipe - barely a recipe at all -
quantity of wild rice, soaked
marinated mushrooms - you choose the ingredients and marinate in oil and vinegar dressing. I added onion, garlic and fennel to my mushrooms.

for every cup of rice, add 1/4 cup of the mushroom mix.
Sorry there is no picture I ate it all before I remembered to take one.

    When I soak wild rice I place it in a jar with water and put a lid on it.

    I lay it in my dehydrator overnight.

    And it sprouts with ease...

    I don't have that option at home. I may try it when I get to finally plug in my D at work.

    In the summer when the weather is warm the wild rice soaks/sprouts much quicker!

    perhaps put it near your wood burning stove?

    That will work at weekends. Less in the week as it goes out during the day. Wild rice is one of my favourite of the heavier foods.
