One of the reasons my last attempt at 100% raw failed was that I lacked essential equipment and quickly grew bored. I love food. I love weird combinations of food. Apparently it's not enough to just have an Oster blender.
This time, I've upped the ante. Now, I've been eating at least 50% raw since that first attempt, so it's not too much of a shocker. I now have a food processor and a Vitamix blender and will probably have a dehydrator come March.
So far, so good. I've made recipes so delicious, even my non-raw boyfriend said they were some of the best things I've ever made. Yesterday I made raw romaine tacos with sweet corn, poblano chile, tomatoes, red onion all bound together with a thick avocado, lime, pasilla chile and garlic paste. Divine!
For valentine's day I made a raw apple pie. I glanced over Ani Phyo's crust recipes and determined that I could kind of wing my own. I put 3/4 cup English walnuts, 1 cup raw wheat germ, 5-6 pitted medjool dates, 1 tbsp coconut oil, 1 tbsp agave and 1-2 tsp coarse sea salt in the food processor and made it into sticky crumbs. Then I pressed it into the bottom of a pie dish. I used the slicer attachment on the cuisinart to slice 3-4 apples, tossed them with cinnamon, lemon juice and 1 tablespoon of B grade maple syrup. Topped it with sliced raw almonds.
My S.O. said it was the best pie he had ever had and promptly gobbled a third of the plate
So anyway, it's going well. My body is still getting back into the swing of the sheer volume of nutrients and fiber entering my body. I'm losing weight slowly but surely. The diet isn't producing the same powerful detox effects that it did the first time, but that's probably because I've been pretty good in the last month with clean foods.
