I haven't checked in with you for a very long time and per Aleesha's request, I thought I'd post a post on you!

Still not 100%, although I still have high hopes for that. I'm a slow transitioner enjoying some full on raw days. I still drink a coffee in the morning.... and have some bread. But hey, that's still pretty good.

Today is a good day, as it's the 13th of the month. Thirteen is always a good day to start something new:) and I decided to up my raw even more today. I love eating this way and hope I am cultivating a better raw lifestyle. There's so much support on this site.

Looking forward to Walnut/Sunflower pate tonight!

    Hi Bella. It IS delish and one of my staples. It's from Jennifer Cornbleet's Raw Food Made Easy.She has great recipes and I higly recommend it and it's subtitled "for 1 or 2 people," so the portions are smaller than most uncookbooks.

    Here are the ingredients:

    1 cup Walnuts
    1 tbsp fresh lemon juice
    1 tsp olive oil
    1 tsp tamari (I use balsamic vinegar, because I am low salt)
    1/4 tsp garlic powder
    put all of these in a food processor and blend til smooth.

    Then put this mixture in a bowl with

    1 tbsp parsley
    1 tbsp minced onion

    mix all together and chill.

    Funny, it might be that I use balsamic vinegar instead of tamari, but I think this tastes like tuna fish which I used to love. Of course, I've been a vegetarian since 1987, so maybe I've forgotten what that tastes like lol

    Hope you enjoy it. As I said in my original post, I didn't have enough walnuts, so I used sunflower seeds to make a cup of nuts. I may try other combinations, because this is a tasty, hearty concoction.
