I'm glad I made this a 95% challenge otherwise I'd have to keep starting my day counting over! lol (I'm learning )

K, first of all I have to interrupt this important message because I am eating the most delicious salad anyone could ever, ever imagine. I can't take a picture of it because I don't want to stop eating it.

But I will give you the recipe:

Greens...preferably a mix. Iceberg, mache, romaine, maybe even spinach would all work.

Onion - maybe a third of a cup? One small one, half a larger one...or whatever amount you think is good for you. : )

1/3 - 1/2 a cucumber, sliced.

1 apple, cored and sliced.

A handful of walnuts.

A handful of dried cranberries.

Dressing is Maple Syrup mixed with mayonnaise. The restaurant I ripped this off from used mayonnaise anyway, I am using Alissa's mayonaisse recipe, but I might try some other recipe next time, the olive oil is a teeny bit too present, but it's still wickedly awesome!!!
With the dressing you want to get the combination a beige colour, so probably 70% mayo to 30% maple, it should taste sweet, but not like dessert...but really, maybe it's a preference thing. maybe you Like dessert!

I used to get this salad all the time at the restaurant, and at $9 a pop, I finally broke down and asked what the dressing was made of. Maple syrup (the real stuff!) and mayo.

Oh and don't feel bad that maple syrup isn't really raw, it's in the master cleanse.

I had:

Nothing for breakfast. ...just super busy but wasn't hungry.

A salad at a restaurant for lunch. It was really beautiful and was called the Big Beautiful Salad! lol...there was cherries and strawberries and grapefruit and greens and apple and other stuff and feta cheese and a little pita type bread on the side. I ate it all and adored it. I didn't feel too full, or really have any ill-effects at all. I made a pack with myself that for now, if I go out to eat I will just eat the salad and not stress if it's not all raw of if there is feta or whatever...don't care. Atleast I'm enjoying myself, stress free and getting lots of greens in.

On that note, I have noticed a Very distinct correlation with greens and healthy looking complexion and eyes. So I'm very happy that I had TWO salads today. : )

Yesterday I was all raw and the stress storm I was under was friggin ridiculous too! But the paper is done, the son is relocated (he's 20 and had a bit of a time with his Dad yesterday and moved out -while I was trying to write a paper before midnight) *perfect timing, haha. All good though, finished my paper with 40 minutes to spare, stayed raw and did not freak out. Yay me!

What else can I tell you....um, my friend at lunch didn't bat an eye when I told her I'm having the salad cuz I'm trying to be raw. I have trained my friends to accept me!!

Oh and PS. I have a Lot of freakin energy on top of being really happy. ...although the happy part is partly because I am officially on reading week too, lol.

    If we can do well under stress - then we've just about got SAD licked I think. You are well on your way.
