Nori Rolls
Last week I would have bet big money that I would NEVER eat nori. Never say never!I would have lost that bet. :) I've tried nori several times. It is so nutritious, I really wanted to like it, but I could NOT get past the strong fishy flavor. Every time I tried to eat it, I would gag and spit it out.
It took a special sweet recipe to win me over. I have been converted into a lover of nori. Thanks go to Chef Schlomi. She did a demo at last week's raw food potluck.
Chef Schlomi's Pate Filling
1 cup walnuts, soaked 6 hours
3 large medjool dates, pitted
1 Tablespoon chick pea miso (I used yellow miso)
Blend in the food processor until smooth (mine could have used more processing, the dates were still a bit chunky) Makes enough for two nori rolls. Using your fingers, spread the pate to cover half a sheet of nori. Align julienne strips of veggies (carrots, red bell pepper, zuchinni) across the center of the pate. Begin rolling tightly from the pate side. When finished rolling, seal the edge with a moist finger. Using a sharp knife, slice the roll into 1" slices. Just before eating, drizzle a spoonful of Coconut Aminos in the center.
I've eaten these 3 times this week! Each time I felt well nourished with an abundance of extra raw energy. Count me as a believer in the power of sea vegetables!!!!!!
I took this dish of nori rolls to an Herb Garden Guild luncheon. It was well received.
My rolling technique needs work, but it isn't too bad for a beginner with no special equipment. Practice makes perfect. No doubt I'll be getting more practice.![]()
