Donut Holes make a great breakfast. So filling! Like eating trail mix all stuck together. I had to make a major modification to Ani Phyo's recipe. I substituted raisins instead of dried pineapple. I only had a small amount of shredded dried coconut to roll the balls in, so used dried coconut chips to put in the balls. Can't wait to try them with dried pineapple and mango. I bought some to use next time.
The burger was inspired by a post I saw on facebook. To make mine I put grated yam, pecans, hempseeds, red jalapeno, fresh cilantro leaves, olive oil, sea salt, gingerroot, and turmeric in the food processor. Dehydrated about 4 hours. Turned out nicely.
Jicama fries are the best. Seasoned with agave, lemon juice, olive oil, mustard powder, onion powder, garlic powder, chili powder, cayenne, and sea salt. Marinated for an hour or so, then dehydrated on mesh screen for a few hours.
The mustard sauce was AWESOME! It might be tough to replicate exactly as I did a lot of tasting and adjusting. Blended dates, agave, melted coconut oil, olive oil, vinegar, lemon juice, cashews, mustard powder, and mustard seeds. I kept tasting and adding more and more mustard seeds. I put it on everything, even plain tomato slices. It was excellent as a dip for the jicima fries.
This food was all from yesterday. Today I had a nut milk/cacao smoothie for lunch made with hazelnut milk, banana, cashews, cacao powder, coconut oil, dates, yacon syrup, maca, lucuma, bee pollen, Vitamineral Green, and honey. SWEET and yummy! Dinner was another smoothie - kale, orange, banana, dates, and blackberries.
In between meals I taste tested sweet potato chips from the dehydrator. I used the vegetable peeler to make paper thin slices. Coated them with a paste of melted coconut oil, dates, chili powder, sea salt and cayenne. Sort of a dessert chip.
Should be a fun and busy weekend. Two parties on Saturday. I'm taking Chocolate-Orange Not-Cheesecake to the lunch party, and Alissa's Calzone to the dinner party.
Sunday, I'm going to Jodee's new raw dessert and smoothie shop for a clean up party. I volunteered to help get everything bright and shiny for the health inspection next week. If all goes as planned, I will be starting my new job as a raw dessert chef very soon!
