On Today's Menu: Alissa's Calzone and Pesto Mushrooms
It was a good week. So much to be grateful for. My 56th birthday came and went. I got a referral to a raw couple that want a meal prepared for them on Fridays. I got a reorder for my angel earrings from a local gift store. Granted, after expenses I only make a few dollars for all my time, but it is more than money. It makes me happy to produce something people will pay for. I feel it is a positive indication of more good things to come.
I made Alissa's Calzone and Pesto Mushrooms. The customer came to my house and picked it up today. She had only requested Pesto mushrooms. When she saw and smelled the calzone, she wanted it, too. I also gave her a sample of onion bread and a piece of pie. She emailed me tonight. They love my food! I'm not surprised. Even my husband loved it. YES, he ate an all raw dinner with me. Sharing raw food is a joy, sharing it with my husband is the highlight of my week. :)
This is the second time I've made Alissa's Calzone recipe. This time it didn't seem nearly as labor intensive. Maybe it was because I had confidence which I did not have the first time. I decreased the crust recipe by a third, divided the dough into 6 equal portions and spread each out extra thin. Instead of 1/4"-1/2" I made it about 1/8 inch thick. The crusts got very well dried, which I liked. I had to dip my finger in water and moisten the crust edges to get the top and bottom crusts to stick together. It worked beautifully. The crusts were completely sealed and the edges dried out nice and crispy again. I left the fillings at the full amounts. It made 3 big calzones. Still have one left.
If there is a downside, it is that the food was so good and abundant.. I ate too much.
I'm not going to write about the pie now. Maybe later tonight or tomorrow.
