Day 3 - So Long Suishi!

Good morning!

Well, almost afternoon.

Yesterday was a great day. In church we finished up a 6 week series on the book of Proverbs. My Sunday school class went out for lunch and I had a salad with cashews on it and every vegetable that the Chinese restaurant had on it. MMMM snow peas!

At lunch I found out that one of the ladies in my class was trying to reverse diabetes on the South Beach Diet. We ended up chatting about raw food and we're making a date this week to talk about the diabetes research. She's already lost 40 pounds by way of Atkins but has had problems with low energy.

Last night I went out on a date. There was suishi (the last time now that I'm retransitioning), bats at Congress Bridge (and they were actually there! I've been 6 times and never seen them flying!), and bowling.

Today is day three and I'm geared up ready to go. I'm making mushroom caps again. They were sooo yummy!!!! And am actually heading out to search for a spiral veggie slicer. Not looking too promising in finding one, but if I'm going to order one tonight I might as well look around first! =D

I'm already feeling a physical difference with the increased raw food. I'm hovering between 89 and 95% and moving forward to be 100%.

I'm going to get some raw Carub chips from Whole foods so that I have a cure for the chocolate craving and won't het the vending machine at work for ye olde Hershey.

I'm still pretty positive, mostly because I know that this is a great way to get centered and balanced again and get me out of the occasional funk that comes with losing my nephew and turned it to more positive things.

    Keep up the good job your doing, Kit. When you get that spiral slicer you are going to have to fix your friend a plate of zuchinni marinara with mushroom caps. She will be saying goodbye to Atkins. :)

    I think you're right! I made enough to stuff mushroom caps for 4 meals. OMG.. loving it! I think I used a little bit tooo much tomatoes this time.. the guacamole was thinner than the last batch. But hey it works!
