Yesterday at the farmer's market I picked up some DELICIOUS nectarines. I can't believe I had FIVE for breakfast today. I started with just 3 but then went back for 2 more about an hour later.

For the past 3 days I've been eating a TON of spinach dip. I think I could live off of that stuff sometimes. The first time I made it I used Alissa's recipe to the TEE. It was good but I'm never one to stick to recipes after I've made it the first time. I've messed around with this recipe a lot and this is my favorite of them all.

Spinach Dip
4 C. baby spinach
1 avocado, pitted
1 Tb. white miso
juice from 1/8 - 1/4 lemon (maybe 1 Tb. total)
dash garlic powder
dash onion salt
dash black pepper
no more than 1/4 C. water

Fill the BlendTec with spinach to the 4 C. mark. Add avocado, miso, lemon juice, garlic powder, onion salt and pepper.
Pour in about 1/8 C. water.
Pulse until blended but still with some texture to the spinach. Drizzle in more water as needed. You'll definitely have to stop and scrape down the sides as you go.

I like to just dip vegetables in this (celery & bell peppers are my favorites) or use it as a sandwich spread on dehydrated bread or tortillas.

    I'm going to try it!! Maybe tomorrow for lunch. I already used my today's avocado in cabbage vegetable wraps for my two girls and me. I am glad they are eating healthier with me, but I'll need to adjust my groceries accordingly. Sure beats the McDonald's meals I would probably have bought them in the past, though!

    So I'm in the market for a new blender. I've had my current Vitamix for 25 years, and have always loved it. Now I'm hearing about the BlendTec. Could you tell me how you like it and if you can compare to Vitamix?
