Skin-Saver Salad

I found arugula at the market today. Not like the baby arugula I'm used to buying in bags or boxes. These were big, dirty leaves tied in a a bunch. I already had all the other ingredents needed to make one of my favorite salads, David Wolfe's Skin-Saver Salad from "Eating for Beauty".

Arugula, chopped avocado, diced zuchinni, sliced radishes, pinenuts, chopped green olives, finely chopped parsley, lemon juice, minced garlic

The mixture of flavors and textures is very nice. Any leftover will keep for a day and still taste good. I might have it without the zuchinni or parsley, but the rest of the ingredients are essential. Sometimes I change it up a bit. Tonight I added a yellow tomato and a light dressing of lemon juice, ACV, olive oil, honey, sea salt, celery seed, and mustard powder. The radishes were organic French Breakfast Radishes. The green olives were raw cured and stuffed with jalapeno. Loved it!

Earlier this afternoon I went in the kitchen to have a green smoothie for breakfast, but I had waited to long. Instead I reached for the dried/fruit and nut candy I made yesterday. I felt decadent having it for breakfast so I also mixed some Vitamineral Green in water and downed that in between eating the candy squares. Now that is taking your medicine with a spoonful of sugar.

About 3 hours later I finished the rest of the spinach pineapple smoothie from last night. I added a tangelo, strawberries, 2 bananas, and kale. I shared it with my brother. He has been around a lot lately because he is babysitting my great-nephew at night while the parents work. They live nearby so he comes here several days a week to hang out and help my daughter with math. He is not raw, but may be someday. He is the only person I know that will drink my smoothies. He really likes them.

Those irresistable candy squares are all gone now. I finished the last four after eating my arugula salad. I'm sad and glad they are gone.

Today is Wednesday. I picked up my CSA box today and went to the market. Both fridges are packed with greens, fruits, and veggies. So many choices. All good.

    Another Great Day - Knitster! :) It's so nice that you are close to your family. Mine are all far away......physically and emotionally.

    ooh - I'll have to try that salad! I'm getting my box tonight and I was trying to decide what to do with the radishes. now I know :)

    Now know what you are talking about when you mention picking up your CSA box. I was given a little flyer by my hairdresser last week and it describe exactly the same arrangement you have, I think. This means that I could pay anywhere between 250 - $400 up front at the beginning of the season and then be able to pick up a box of produce every week. I could even go there to share in the work, if I wanted to. (Thought about taking my grandson? - not sure if they'd allow it, but I bet they would). My hairdresser gave me this information because I know she eats healthy foods - sort of - and I wondered if she knew where I could get organic produce nearby. Your food sounds delish - as usual Frances.
