Strawberry Breakfast Mylk

Remember that awful Nesquik strawberry syrup we all used to mix into milk when we were kids? At my house that was always a rare treat. We frequently had the chocolate syrup to make chocolate milk but it was rare that we were allowed to get the strawberry syrup. This morning I woke up with a craving for rich strawberry milk. After spending a little time puttering around in the kitchen, this recipe is what I came up with for that old childhood favorite. In my opinion, it is spot on in both flavor and texture.
Strawberry Breakfast Mylk
1/2 C. Brazil nuts
1 1/2 C. water (I wanted to use coconut water but didn't have any)
1/4 C. dates
about 2 Tb. blue agave
pinch sea salt
cap full vanilla flavoring (or 1 vanilla bean)
6 frozen strawberries
1. In a high speed blender mix the Brazil Nuts, water and dates until smooth.
2. Strain through cheesecloth or a nut milk bag. Save the meat for use in another recipe.
3. Pour the sweetened Brazil Nut mylk back into the blender and add the sea salt, vanilla and strawberries. Blend until smooth.
4. Drink as is or pour over grawnola.
Makes approximately 16 oz. and is rich enough to be considered a meal substitute.
*Next time I think I'll soak the nuts and dates overnight and use coconut water and a vanilla bean in place of the water and vanilla extract. It would also be worth a shot to put it into the ice cream machine to make a nice frozen treat. Enjoy!
