I was eating a few Cheesy Curly Kale Chips when my husband asked if he could try one. I gave him a tiny piece and waited for the reaction. He asked for another. I offered to refill the bowl for him and he said, Yes. As I handed it over I'm waiting for the "April Fool's" but it was no joke. He ate them. That's a first!
I slipped a buckwheat cookie in the bowl and he ate that, too. He said it tasted like a bran muffin. I don't see the similarity, but okay, I'll call them muffin cookies. It started with a batch of maple cinnamon pecans. After putting the coated pecans in the dehydrator there was all that tasty coating left in the bowl. I put it in the food processor with a few pecans, a pear, and vanilla. The flavor reminded me of oatmeal cookies. I was wishing I had some sprouted dried buckwheaties to stir in, instead I ground some buckwheat groats into flour and added that to the mix. They have been drying over 24 hours. I'll take them out tonight.
There is also a sheet of crackers in the dehydrator. I had carrot-kale juice for breakfast. I took the pulp and added more carrot pulp and the juice from those carrots, ground sunflower and flax seeds, parsley, sesame seeds, curry powder, onion powder, garlic powder, lemon juice, agave, sun fire salt, and hot pepper flakes. The cracker "dough" was good. I'll cut it into crackers with it's ready to turn.
Today's lunch was a green smoothie; half a white coconut water and meat, an orange, banana, spinach, Vitamineral Green, water, and ice. And the kale chips. Followed by one of each of the 3 different types of cookies in the house, buckwheat, applesauce, and mac-nut brownie.
Dinner will be the same salad I had yesterday. I am looking forward to that. Baby arugula, parsley, red pepper, green olives, avocado, pine nuts, maple pecans, with my plain house dressing (olive oil, lemon, acv, honey, garlic, ginger). The flavor mix is intense.
My one bit of sanity is that I am still only eating 3 times a day. Nothing but water or herb tea in between meals. Some times this is a challenge, especially at the 2 hour mark. It certainly can't have anything to do with being hungry.
I will close with honorable mention of the chocolate covered strawberries I had on Monday. The jar of Lulu's Raw Vanilla Rose Chocolate that I didn't care for...I melted some in the dehydrator, added agave and dipped some strawberries. Then put them in the fridge to set up. Out of this WORLD! I think I'm getting more strawberries in my CSA box today. Maybe that's what I'll have for one of my meals tomorrow.
