Leftover Pies

This morning I took leftovers from two pies and turned them into Fruit Roll ups. Can hardly wait to see how they turn out.

I had lots of time yesterday to play in the kitchen. Found some sweet potatoes that had been lost in the fridge and made Alissa's "Sweet Potato Pie" for dinner. Also had 3 cups of Blueberries that I needed to use so I made Alissa's "Blueberry Pie". Even though the recipes were cut it half they each made a nice sized 8" pie.

I ate a quarter of the Sweet Potato Pie for dinner and later ate a quarter of the blueberry pie for dessert, and sent a quarter home with my brother. While the pies were tasty and very satisfying, I didn't really want to eat more pie today. Rather than let it go to waste I had a crazy idea, put the remaining half of each pie in the Vitamix (separately) and make puddings. It took a little water to get the blade turning, but the puddings came out thick, smooth, and delicious. I ate some for breakfast. The rest of the puddings are in the dehydrator, spread out on teflex sheets.

The only other food I ate yesterday was a green smoothie. Orange, banana, spinach, kale, and frozen strawberries. Got to have that again today. Soooo Good! Oops, almost forgot about the Brownie Balls...ate 2 of those.

It was a good day, food wise and in general. I'm looking forward to another good day today. :)

    Ooh - I forgot about the sweet potato pie. I haven't had that in a while. Man, I wish I had some blueberries right now!
    What a fun idea to turn the pies into puddings & leathers. I'll be interested to hear how the leathers turn out.

    Hi rawchic! Blueberries are on sale one more day at QFC. A small box is $1. They are from Chile and not organic, kind of seedy, too. Not as good as the CSA blueberries, but what the hay, I had to have some. :)

    It does sound like you are having good food days. And you sound so Grounded. Yay! I love how creative you are. Can you spend some time at my house so, we can play in the kithchen? ;)
    I don't buy any fruit from Mexico anymore because, they always either taste really chemically or they are spoiled and no good especially the watermelon.
    I bought 2 cantelopes the other day. They were 4 for $5. It tastes really chemically.

    Totally stressed about my daughter and her Freshman project that she is behind on. And tonight there is a PreRegistration Event for Parents at the High School she will go to next year. That's why I only blabbed, I mean blogged about the food today. I'm trying hard to stay grounded at the same time as rising above it all by not dwelling on it. It's only 3 1/2 more years.

    I can't wait for you to come and you see all my babies! ;)

    I remember the teenage - high school years.....hang in there. After the 3 1/2 years however, you realize that it's a lifetime committment - kids - that is. :)
