Birthday pie

It was my husband's birthday today, and the pie we made was amazing!
I improvised a bit with the different recipes for the pie, but wow, it came out wonderful!
This was the first pie, that didnt' have too much crust for me. I like a lot of fruit in my pie. Too much crust is just too heavy for me, I don't care to eat that much of it.
It was an almond/date crust, with blueberry/frozen mango filling (I can't imagine how much better the pie would have been, if fruits were in season) and cashew/coconut cream on top. I think the fresh coconut (not young just fresh and organic) in the cream made a big difference. I never remember cashew cream tasting sooo yummy! For the first time also, I put lots of almond meal at the bottom of the pie dish, to keep it from sticking, and those crumbs ended up giving the pie another texture, and I loved it!
Needless to say, we ate the whole pie, just my husband, myself and our son Dillan, who can keep up with the best of them, lol.
I am actually satisfied, I don't want anything else right now, which is awesome!
Today was really a good day, and I decided I needed to keep a food journal again, just to keep track of what I am eating.
Breakfast: Orange Juice
Lunch: Mexican Almond Scramble (Ani Phyo's, but I renamed it, since breakfast scramble makes you think of eggs, and well, it's raw food and it does not taste like eggs, but it was absolutely delicious, definitely a food I'd make again)
Snack: Grapes
Dinner: Blueberry Coconut Pie
