Yesterday I had good news, then bad news, and then good news.
First, I got home & was excited to have a coconut. I knew I had my networking event in a couple hours so I wanted to have lots of yummy raw food before I went. First good news: I successfully got the coconut open! (Thanks RawKnister for the tip!) but then the bad news...the coconut was purple inside. Has anyone ever seen this before? I poured the juice into a cup and it was a strange pink/purple color and then there was hardly any meat inside the coconut and it was a purple color. I was so bummed! I was too scared to eat it so I threw out the juice & then took the shell back to the store to exchange it. So now I have a new coconut for today.
Instead, I had a big bowl of borscht (leftover from the other night) to fill me up, and I stuck some raw crackers & raw chocolate in my purse in case I needed something at the event. Good news again - the event was successful! Honestly, I didn't even want to try any of the food that was there. Most of it wasn't vegan anyway, so really the only thing I could have had was bruschetta. Unfortunately, there was a wait staff hand passing the food, so I had to say "no thank you" at least 15 times to different waiters. But I did it! No cooked food for me :) I took one look at the processed white bread that was under the delicious tomatoes and I thought to myself, there is no way that I want to put that into my body. I would much rather just eat the tomatoes! Since I didn't think there was any way to gracefully eat the toppings and ditch the bread, I just didn't have any of it. Which was fine because I wasn't hungry anyway. Hurray!
The best part is that this gives me confidence for Saturday...we have a family reunion at my husband's grandmother's house. The ultimate challenge - 30 people all trying to push their homemade food onto me. Ugh, it makes me tired just thinking about it. No worries though - I will go in with the same game plan. I'll eat before we get there and I will bring my own food just in case. I was hoping grandma would assign us to bring a salad or fruit, but instead we got assigned to cold drinks. Maybe I'll just bring a fruit salad anyway.
