just have been in a whirlwind.
so as a peace offering i first hold out a recipe:
banana cream crumble pie with caramel sauce
crust:
2 c walnuts
1/4 c dates
1 tsp coconut oil
1/2 tsp cinn
pinch salt
food processed, press 2/3 into pan and reserved 1/3 of it to crumble on top.
filling:
3 bananas
1/3 c dates packed
pinch salt
1 tsp van
1 tsp almond extract
1 tsp psyllium
1/2 tsp tumeric, for color
1/3 c coconut flakes
1/2 c water
1/2 lime, juiced (lemons $$$ right now)
food process smooth then add:
1/2 c coconut oil
2 tsp lecithin liquid
process smooth

i poured it into the pressed down crust
sliced another banana on top all pretty then sprinkled the leftover crust mix on top.
covered and put into the freezer till firm.
i made no cream for the top. (no hi speed blender, it's in the hospital) but it would be nice to dollop on the side.
without it's less expensive less nut rich and quicker to make.

it was super quick to make, got rid of 4 bananas that would not have lasted much longer in the fruit bowl and looks to be a yummy thing to eat.

i made the caramel topping for the caramel dream bar brownies and thinned it with enough almond milk to make it squirt-able from a squeeze bottle.

now my newest thinking point.....
times have been economically difficult for everyone.
i have been wondering how to make raw classes in the boonies fly,
the interest is too mild for making it a real business... tho i am able to
give some seats in my classes away (hahahaha!)
i was approached by a friend yesterday
who is in the process of acquiring a fitness center.
she asked me if she can keep me in mind for doing something with the raw there!
no details yet, but .........!!!!!!!!!!!!!!!!!!!!!

ok, this is big for me, since i have never been a business owner before this year
or have been asked to show my raw talents in such a validating way.

so i am thinking today of what some of the offerings can be in conjunction with
that gym venue [and what i should be paid for a non-nonprofit venture like this.]
i am open to people helping me brainstorm some great ideas and then i can weigh if it
will be worth my time. i only have a small amount of time i can devote to it due
to the fact most of my time is already taken by other unbudging commitments.
so if i use 2 days....
i do not think they are set up with an area (yet) for un-cooking demonstrations.
i can offer to design custom menus for the week with their situations in mind...
i think i will be introducing clients to raw probably for the first time ever.
without getting in medical trouble teach how raw will help them lose weight, get healthy
glow, move easily (body, spirit and bowel),
i must think health department if i handle food at all, and do i need any kind of insurance?

what else?
my mind is drawing a big huge blank today... what is raw brain food? tee hee.

on the good news front:
i am almost done with my vision board and the results are nothing short of amazing.
when i look at it i feel a sense of peace wash over me and strong purpose.
it really focuses me.
wow!
i must finish it and print it out so i can gaze upon it more often.
right now i have it in photoshop and it is an enormous file that takes a long time to open
with all it's layers. so once i finish it i can flatten it to make it smaller
and save it in a more compressed form. smaller yet.
maybe it will be small enough to use as a background or screen saver.

the sad news this week:
a dear friend got crushed in a construction accident
and was medivac-ed to the nearest medical center. (far)
he will be ok, unbelievably because every rib is broken but
did not pierce any vital thing... his spleen wound up
just being bruised. his back is broken in 4 places
they were able to repair 3 vertebrae and his belly
was full of blood- they had to go in and put everything
back in place & stitch it there because of the size of the
hole in his belly. the bowel did not perforate which was
the fear, but the colon had a tear which they did repair.

what a day! we almost lost someone who makes our life
so much better, because he is a part of it...

so all in all you can see some of what is happening in my life right now
(along with the normal stuff like gardening becoming a grammie in nov. etc...)
so please forgive my lapses
and send kind thoughts
and ideas

    oh .. whooops.. i just checked my recipes... sorry - I do have that recipe! you see how I get soo confused when it comes to your recipes.... I just go all a quiver with excitement that my brain doesn't function properly!! teheee!!

    OMG GIRL... SOO MUCH GOING ON!! first... I'm so glad your friend w be okay - gosh how scarey - and nothing short of a miracle I would say... God Bless him and his family... and... I do hope you are planning on posting a pic of your vision board... wouldn't that be fun? if many of us could do that? aaand.. lets see... YOUR NEWS about the fitness center... omg ! that is sooo EXCITING! your mind must be reeling with possibilities and ideas! SOOO COOL!

You really do have a lot going on right now - I am sorry to hear about your friend - I will send healing thoughts/prayers your way. I unfortunately do not have any ideas for your business plan - but I know you will be great!!! Muwahhhhaa~monk~

    snowdrop, guess what I am going to make this weekend for dessert! Mmm, that looks so delicious. Thanks so much for sharing. I so wish I could get your recipe book up here in Canada. Maybe some day - or I'll figure out another way to order it through a friend maybe (I have one in Santa Barbara). I was sorry to hear about your friend - he is blessed to have a friend like you.
