List of double-duty meals

Okay, Phedre, here are some of my double duty meals!

Just to preface, Mr.Liza likes smaller meals and lighter foods than a lot of guys do. He loves peppers, pickes, olives, spices, and ethnic foods of all kinds. He prefers a vegetarian (though not necessarily vegan) diet.

1. Pad Thai Sauce (LOLF)

I fixed this for myself per LOLF, with bean sprouts and zucchini "noodles" and some fresh cilantro.

For Mr.Liza, I boiled some whole wheat angel hair pasta and when I'd drained it, I took the empty hot pot, added a little evoo and sauteed some snow peas for about 60 seconds. His pasta had the pad thai sauce, the bean sprouts, the snow peas, cilantro, and peanuts. I made enough for 2 meals and my sister had some the next day. She liked it, too!

2. Mexian suite:)

2.0 A mixed vegetable salad that had diced zucchini, tomato, avocado, onion, cilantro, and raw corn.

For me, I put some walnut taco meat and oil and lemon dressing on and called it supper!

For Mr.Liza (before the dressing, but you could do it either way), I made oven nachos with organic tortilla chips and preshredded cheese (now I'd probably use the Rich Cheddar Sauce because he likes it). I made a smaller than usual portion, and heaped tons of the salad over the nachos.

2.1 I made a different type salad--raw corn, lettuce, tomato, avocado, green onion. I used more avocado, mashed, olive oil and lime juice to make a dressing.

For Mr.Liza, I used an Ezekiel sprouted grain tortilla. I layered this with refried beans and the Rich Cheddar Sauce (no more cheese in the house!) the salad, and the avocado dressing.

2.2 Using the above technique, I made a "7 Layer Dip" type dish.

We do love Mexican around here!

3. Gus' Pesto (LOLF)

I used zucchini noodles and pine nuts.

For him, I used regular whole wheat pasta. I added some sun dried tomatos to the pasta while it was cooking (quick soak!). To plate, I chopped the tomatoes, tossed all with pesto, and topped with pine nuts. I still have parmesan, so I put this on it, too. This would also be good with olives.

I hope this helps--I think there have been more, but they're not coming to mind at the moment!

    Wow! You sound like quite the busy chef! Everything sounds wonderfully healthy - even "Mr. Liza's" food - that's too cute. Keep up the great work!
