    Yesterday was AWESOME!!!

    First thing in the morning I went over to the free clothing swap at the church. Now, our church has a reputation for being rather disorganized and doing lots of things mediocre-ly (is that even a word) instead of a few things well.

    Saturday 8/15

    Today (Saturday) was kind of a bust. We got up and I had planned to take DS10 into the city to the zoo and maybe a sports museum. Unfortunately, thinking that DH had been there before I didn't print out directions so we hit the wrong exit and never made it. I was pretty bummed. Instead we ended up coming home; the guys worked in the yard, I did a little indoor work, read on the porch and then watched a Swahili movie while riding the bike.

  3. Blueberry Cheezecake

    Last night I decided to use some leftover nut meat (from making nut mylk) to make a yummy blueberry cheezecake.

    Blueberry Cheezecake

    Crust

    I used about a cup of nut meat leftover from making brazil nut mylk and added 1/2 C. shredded coconut and a pinch of salt. If you don't have leftover nut meat try this instead.

    1/2 C. brazil nuts
    1/2 C. shredded coconut
    Pinch of salt
    1/4 C. dates
    1 tsp. vanilla extract ...

  4. Orange Creamsicle Mylk

    2 C. fresh squeezed orange juice
    1/4 C. Brazil nuts
    1/4 C. cashews
    5 medjool dates
    pinch sea salt
    1 vanilla bean
    zest from 1/2 orange

    Whirl everything in a high speed blender until well mixed.

    Strain through a fine strainer or cheesecloth.

    Return liquid back to the blender and add 1 C. ice. Blend until the ice is well broken down and there are no chunks left.

    Drink immediately.

  5. Training Day 26

    Yesterday at the farmer's market I picked up some DELICIOUS nectarines. I can't believe I had FIVE for breakfast today. I started with just 3 but then went back for 2 more about an hour later.

    For the past 3 days I've been eating a TON of spinach dip. I think I could live off of that stuff sometimes. The first time I made it I used Alissa's recipe to the TEE. It was good but I'm never one to stick to recipes after I've made it the first time. I've messed around with this recipe ...
