  1. Tomato/Olive/Onion Salad

    At the local grocery store salad bar there is this really yummy tomato/olive/onion stuff that I like to get on my salad. I've been dying to try and recreate it at home since it appears to be pretty straight forward. I didn't measure anything, just threw it in a bowl on top of some spinach and chopped romaine lettuce. Yummmmmmmmmmm!

  2. Training Day 18

    Goooooooooooood evening, peeps!

    What a gorgeous day it is here. DH and I set out again this morning and had tons of fun again.

    I wanted to hit up some Goodwill's today and we ended up checking out 3 or 4 different ones. My original intent was to find some cheapie t-shirts that I could wear with my workout pants. All the ones I have are too big and fall off of my shoulders uncomfortably when I work out. I couldn't bring myself to pay $4 for a cheap t-shirt ...

    Last night DH went to the library and picked up a few books for me. One of them was The Walker's Journal: Experiencing America on Foot by Robert Sweetgall. It was about a man who departed from the town we currently live in and walked through all 50 states in 364 days. This morning I lay in bed and read the whole thing from cover to cover. I love travel stories, particularly ones where the traveler is on foot.

    This morning I got a fierce craving for some greens and this is the salad I just had.


    Salad Ingredients
    spinach
    arugula
    chive blossoms
    avocado; cubed
    yellow peppers; sliced

    Dressing Ingredients (as inspired by Dimond's soup recipe)
    1 ripe tomato
    chunk mango
    squeeze lemon juice (about 1/4 lemon)
    1 sm. clove garlic
    pepper
    sea salt
    water

    I got this recipe from the latest issue of Vegetarian Times magazine. With a couple of substitutions it was absolutely DELICIOUS. Even my carnivorous husband loved it. Yumm. Yumm. Yumm.
