    Oh thank you so much for sharing all of this bella. You sound so enthusiastic, happy and busily involved with your raw meals. Very good example for some of us slower ones here - like me.

    Thanks for the tips! I will make the salsa walnut meat this week for sure, but will have to wait until next weekend for the tostadas when I have time to watch them. Thanks again for everything!

    No problem at all! Oh, and I just made the salsa walnut meat again, and I realized I also process the recipe differently. It sounds like, the way she does it, it would come out a paste consistency. I made sure I processed mine minimally to still get a chunky consistency. I actually did the walnuts first, to make them small enough, since I figured the nuts take longer than the veggies, and if I did them together, there would be no chunks left of the veggies.

    Oh you definitely should try it. It's so easy! Another big plus for me, not much to plan ahead for. But I do like to soak my walnuts before for an hour or so, but that's personal preference.

    I don't remember where I got the recipes for the tostadas or the cheesecake, so I'll just write it down.

    Corn Tostadas/Tacos/Chips


    16 oz bag of frozen corn
    1/2 cup orange juice
    1/2 cup golden flax seeds, ground
    1 T garlic powder
    dash of lemon juice
    salt to taste

    Process corn and OJ in food processor. Put in a bowl and add the rest of the ingredients. Spread thinly on teflex sheets in desired shape. I've even made taco shells last time. But I'll have to find something to keep them open an inch or so, because they dried closed, and were hard to fill, and some ended up breaking, trying to pry them open to fill them.

    Cheesecake

    Crust
    2 cups walnuts, finely ground
    1 tsp cinnamon (didn't use, but used vanilla extract instead)
    1/4 tsp sea salt
    1/4 cup agave (I like to use dates)

    Cheesecake filling
    1 1/4 Pine nuts, ground (I never tried it with pine nuts, I always use soaked cashews)
    1 cup coconut oil, liquefied
    1/2 cup agave
    Juice of 1 lemon
    1/4 tsp salt
    1 tsp vanilla extract

    Put all in food processor or vitamix and blend.

    Swirl Filling/Topping

    1 pint strawberries (I always make more to have enough to put on top on the cheesecake)
    1 tbl agave (I use honey and it works great)
    splash of lemon juice

    Let the strawberries marinade for a while to give the strawberries time to release juices.


    To assemble the pie, pour half the filling into the pie crust, add some of the strawberry topping mixture, then pour the rest of the pie filling on top to cover the strawberry mixture. Drizzle a little bit of strawberry juice on top of the pie for decoration. Chill for about 2 hours before serving.

    Hey guys! Thanks! Here is the link to the recipe. I actually modified it a bit and added more veggies, the way I prefer it .... 2 green onions, 1 tomato, 1/2 red bell pepper, 1 stalk celery and a bit more sweetener.

    don't feel bad - we've all been there! The best thing you can do is have a short term memory...forget about yesterday and move on to living raw today.

    I am sorry that you are struggling. Sometimes saying forever can be very difficult. Just because you caved in to the pizza does not doom you to failure. Eat raw today and move past it. And ask hubby not to bring trigger foods like that into the house until you feel stronger and able to handle it. I know how hard it is. I am surrounded by SAD foods all day every day. No one eats raw in my family except me. So that is 7 other people chowing down on SAD all the time and the temptation is all around me.
    It is wonderful that your hubby went raw with you. How amazing! Your going to be ok. Just start over today and don't dwell on the pizza incident.

    That's a scary place you are in. I know when I have had that non-raw thing I like - it has started me on a binge. But, "not always." So, maybe this will be your "not always."

    I'm glad to hear you are not doing the guilt thing. Screw Guilt! As they they say. There's no point in it. David Wolfe and other Raw Food Guru's I've heard say "Whatever you eat...enjoy it and love it" If you enjoy it and Love it you don't turn it into a Bad thing and you can just keep moving forward with RAW! :)

    Lol, Knitster, no, my dog is too big to be held in my arms ... I believe it is a napkin and food. My daughter who is three took this picture, and I thought it came out pretty good. :)

    About my food choices, like I said, I've been in a bit of a funk, about what to eat, so I have been eating pretty simple. But I actually want to eat less nuts, so it works out. :)
