These are soo good that I had to share. I was getting the cookie monster last night and I've been so craving the ginger cookies you can get at whole foods so I decided to get creative last night, this is what I came up with. They are not a super sweet cookie, and likely would make a good muffin if you added some carrot for moisture, or a good granola bar. I made cookies out of them though!
Spice Cookies
1 cup sprouted soft wheat berries
1/2 cup sun flower seeds (I didn't soak)
1/2 cup raisins, soaked
1 tlbs honey, or to taste (if you want it sweeter add more)
1 inch piece of ginger, grated
1 small dash of nutmeg, 1/4 tsp max, probubly closer to 1/8
1 generous sprinkling of cinnamon, about 1/2 a tsp to 1 tsp
I put the wheat berries, sunnies, and raisins in a food processor and mixed until it had a chunky but dough like texture. Then I grated the ginger and added the rest in and mixed it by hand to combine. I don't see any reason why you couldn't put everything in the processor at once. I was tasteing as I went to get the combination down right. Makes about 1 1/2 dozen half dollar sized cookies. Put in Dehydrator at 105 degrees for 12 to 16 hours. Going to depend on size and how 'crispy' you want them. Mine have been in for 11 at this point and they are starting to get crispy on the outside, but still chewy on the inside. I want crisp! They taste very good though, and the ginger flavor will intensify with dehydrating, don't use more than what I said unless you _really_ like ginger. These guys are strong! They are like a mix of an oatmeal cookie and a ginger cookie. Could make it more like that by using sprouted oats instead of wheat. I had wheat on hand though.
