Dr. Richard Couey at Baylor University has written a book about the importance of enzymes in the diet. It should be an interesting read. while he doesn't advocate 100% raw, its pretty cool to see a conventional doctor promoting raw foods. read about it here:

Wow, that's great. I think this is sort of going around. I know of a few conventional doctors who advocate some raw. Dr. Joel Fuhrman is one; he's an author, lecturer, and ex-world-class skater. He also advises fasts.

Yes - Dr. Fuhrman advocates eating alot of raw foods as well as some cooked "whole foods". He also makes the observation that the key to health and disease protection is eating large amounts of produce - especially greens and that a person who has small amounts of lean meat a few times per week but consumes large quantities of fresh fruits and vegies is in much better health than the vegan who lives on processed soy burgers and cookies. I think this is also true of some raw fooders who consume massive amounts of concentrated nut products, honey, dates, etc. and don't balance their intake with plenty of vegetables. Just something to think about.
